A popular ramen shop with an addictively rich broth

A popular shop lined with people of all ages on weekdays, cyclists who come to Tango on weekends, and bikers touring the Tango Peninsula. Haneman has built a good reputation for ramen that has an excellent base, a light, pork bone and chicken bone base with plenty of savory back fat. The backfat, which holds the key to the taste, is boiled pork that has been specially procured, seasoned with soy sauce, and mashed into a small size with coarse mesh. People of all tastes will find something they love with eight types of ramen, such as pork bone soy sauce, Chinese soba, miso, salt, and seafood. The noodles used are straight and thin noodles, procured from Hiroshima and selected according to each soup. Also, the set menu is substantial, and the order rate is high for char siu rice bowl (roasted pork), fried rice (small), gyoza, and rice (each +310 yen, tax included).

I was involved in various jobs in Osaka and Tokyo, and with the money I saved, I was able to open a beloved ramen shop locally 14 years ago. However, it was a tough battle at first. Therefore, while continuing business, I became a disciple of a ramen shop [Kokoragi-tei] in Amino. I re-learned how to make it from step-one, and created my own ramen style like the current pork bone soy sauce and Chinese soba. And now the number of customers is rapidly increasing! In the future, I am going to create more unique items using local specialties such as bagna càuda (made with Ine sardines).
