The perfect fish is a collaboration between the fish-broker and chef

Totogen was established in the early Showa era in Maizuru, which is as competitive as it gets when it comes to fish markets. [Marufuji Foods] is a fresh fish supplier respected as having some of the best fish in the region, and is the parent company to Totogen (which opened in 2015). The backbone of this restaurant is the fish, and it all starts with the buying, which is handled by Mr. Takashi Yuzawa, a fish broker and business representative. He primarily selects seafood directly from Maizuru’s fishing port Tsuruga, and Amino’s port in Kyotango, as well as some carefully selected items from all over the Sea of Japan. Chef Tetsuya Oishi cooks seasonal seafood like rock oysters in summer, shore plovers in spring and autumn, and crab in winter. “A chef couldn’t be happier, being able to use the best fish every day,” says Chef Tetsuya. With careful preparation and beautiful fish dishes, Totogen attracts not only local customers but also people from both inside and outside Japan. With the opening of Totogen’s East Maizuru restaurant in the fall of 2019, customers can expect big things from Totogen.

I’m originally from Maizuru. After training for more than 10 years in Kyoto and Osaka, I returned to the local area and felt that I could test my skill with fish dishes with the ingredients that Marufuji Foods purchased, so I decided to work as a restaurant manager at [Totogen]. .. ❖ Not only is the fish wonderful, but the sake that our buyer purchased from all over the country also makes me proud. We always have about 50 types! And I try to complete the dishes with a flavors that suit the sake. Vegetables and rice are also local, and I hope you will come and enjoy the richness of Maizuru's food.

Shore Plover Saikyo-yaki

The restaurant boasts a miso-pickle menu using Kyoto's white miso. There are about 12 types including mackerel and sea bream including shore plover. Please match it with sake. 2,000 yen (excluding tax)
