For important anniversaries and business dinners... When you want to eat something tasty, this is a Japanese-style izakaya restaurant that locals use. The huge aquarium you see when you walk in is the symbol of this restaurant. After an order is placed, the chef scoops the fish out with a net and starts cooking at the counter. That fish that had been swimming in the Sea of Japan until recently and was caught and sent here directly from Maizuru Port. In order to provide fresh local fish, the chefs here go to the harbor every morning without needing to purchase their seafood through a fishmonger. Maizuru is also known for fresh vegetables. The chef visits the fields and grows vegetables with contract farmers. If you want to enjoy the seasonal and local flavors of Maizuru from the perspective of top-class fish and vegetables, this is a restaurant you should definitely visit.

After 17 years of training in the Kanto area, I returned to Maizuru. It’s easy to find seasonal ingredients in Maizuru. They are always fresh and prices are low. I am continually surprised by the difference compared to the Kanto region. Since the distance from the people producing the ingredients to the chef is so close, its possible to conceive of a dish you want to cook and ask for the ingredients necessary to make it happen. It’s really fun to have that kind of freedom. My background is actually in Chinese food. The approach to fish dishes is a little different from primarily vegetable cuisine, but my aim to create new dishes that makes the best use of my skills to convey the charms of Maizuru.
Mackerel sashimi and local fish platter
We are able to offer mackerel sashimi, which is rare even in Maizuru, only because we can attest to the freshness of the fish. This fish is taken from out tank and prepared just before eating. .
