Sushi fresh now and later

Miyako is a take-out and delivery specialty sushi restaurant located along the main road near JR Ayabe Station. Since the store opened 20 years ago, and is especially busy on special occasions like during New Year’s and the Obon Festival, when families gather together. Unlike conventional sushi restaurants, the owner, Mr. Hiroshi Kobo, put a lot of thought when working to create sushi dishes that wouldn’t be eaten right away. The staple for most sushi is the sushi rice. He uses local white rice and mixes in a sushi vinegar that was produced as a result of many years of experience. And he makes a lot of it because it takes time to prepare and without it he wouldn’t be able to keep making such ample portions or fill additional orders. And this restaurant has a reputation for having high-quality rice. You can order items individually or wasabi-free as well.

from the chef:

The motto is “sushi that is still delicious at home.” We are proud not only of our fresh ingredients, but also affordable prices and ingenuity. Thankfully, when families get together in Ayabe, many do so gathered around this sushi. And over the years, children eventually grow up and continue to order from us. And because of that we are grateful to be cooking for new families as well. We are also planning to try making sushi using Ayabe's specialty mulberry leaves and sweetfish.
